Monarch Notes: Ability to toggle default formatting + persist mode per note

Apple’s TextEdit has this feature in the settings, where user’s can choose to default to rich or plain text. I almost always turn switch it to default to plain text.

It would be even nice if Monarch Notes was able to persist the mode after closing it per note. Maybe that’s asking for too much 😅 But for my use cases, I notice, for particular notes, sometimes I prefer plain formatting and might have other notes that I want it to use markdown for.
